      <image:title>blog - 「空盤 komboi 」推出為期一年 tour de france！首站將帶你到夏季南法勝地普羅旺斯吃燉菜、尼斯沙拉、馬賽魚湯 - 揭開序幕的三道精緻開胃菜小點，從烤至酥脆的春捲皮裹著鮭魚和自製番茄醬汁，到點綴著伊比利生火腿和橄欖醬的橄欖蛋糕，彷彿就像接下來晚餐的縮影，每一口都吃得到經典南法元素。緊接著，端上桌的是一道創意翻玩尼斯沙拉 Salade niçoise 的冷前菜：用酸豆製成的塔皮，上頭盛裝著煙燻黃鰭鮪魚、蛋白、以及各式生菜，下面則墊著有加入豆漿提味的鯷魚醬，再撒上台菜很常使用的鹹蛋黃。店長更有趣的指示建議將所有食材敲碎，全部拌在一起吃。平常很少吃鯷魚和酸豆的我，卻完全不覺得味道很嗆，反而襯托出了鮪魚鮮甜，最後加入的鹹蛋黃更讓我在這道陌生的料理找到了一絲屬於家的熟悉感。</image:title>

      <image:title>blog - 「空盤 komboi 」推出為期一年 tour de france！首站將帶你到夏季南法勝地普羅旺斯吃燉菜、尼斯沙拉、馬賽魚湯 - 7 course 晚間菜單中，最令人驚豔的絕對是接在主菜後的第一道甜點了。在一開始看完菜單後，心中就很好奇：番茄、紫蘇、和醬油到底會是個怎麼樣的甜點？店長在上菜時，特別叮囑要用湯匙，從最上層的番茄澄清慕斯、中間的紫蘇冰淇淋、油漬番茄和紫蘇梅、到底部的焦糖醬油、以及最後點綴上的茴藿香，全部挖著一起吃。一切看似毫不相關的食材，卻碰撞出了充滿驚喜的風味，成了菜單中最亮眼卻很合理的轉折點。Chef David 透露說來自台南的甜點師傅是以南部人習慣拿番茄沾著醬油膏、薑泥、糖粉一起吃的飲食習慣來做發想，並設計出這道酸中帶甜，甜又帶鹹的創意甜點，無限循環的味蕾碰撞，著實讓人意猶未盡。</image:title>
